YAM STEW WITH COSTEÑO CHEESE

Ingredients:

1 yam root (1kg)

330 g Bajo Grande Costeño cheese

1 red onion

Spring onions

Paprika (red or green)

3 cloves of garlic

Coriander

Salt and pepper

Olive oil

Recipe (10 servings)

Cut the onion and bell pepper into squares and peel the garlic.

Peel and chop the yam.

Bring 5 liters of water to boil in a large saucepan and add the garlic and sufficient salt and pepper.

Add olive oil to a pan and sauté the onion, bell pepper, and spring onion.

Add the yam and the onion and pepper mixture to the boiling water and simmer until thickened. Cut the Costeño cheese into 2 x 2 cm cubes and add to the soup.

Chop the coriander and add it directly to the pot or plate.

Let it cook for a few minutes before serving.

Pork belly (chopped up and crispy)
